- 2 flatbreads or naan
- 1 cup cooked chicken breast (shredded or chopped)
- ½ cup BBQ sauce (plus extra for drizzling)
- 1 cup shredded mozzarella cheese
- ¼ cup red onion, thinly sliced
- ½ cup pineapple chunks (drained)
- 2 tbsp chopped fresh cilantro (optional)
- Olive oil (for brushing)
Instructions
Preparation
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Brush each flatbread lightly with olive oil and place on a baking sheet.
Step 3: Spread BBQ sauce over each flatbread.
Step 4: Top with shredded chicken, mozzarella, red onion, and pineapple chunks.
Step 5: Bake for 10–12 minutes, or until cheese is melted and bubbly and edges are golden.
Step 6: Remove from oven and drizzle with extra BBQ sauce. Sprinkle with fresh cilantro if desired.
Step 7: Slice and serve immediately.
Notes
- For crispier flatbread, pre-bake for 3–4 minutes before adding toppings.
- Drain pineapple well to avoid soggy crust.
- Use rotisserie chicken for convenience.
