Step 1: Prepare the cheese cubes
Cut the mozzarella into bite-sized cubes (about 1 inch). Pat them dry with a paper towel to remove excess moisture.

Step 2: Set up the breading station
In one bowl, place the flour. In a second bowl, beat the eggs and season with a pinch of salt and pepper. In a third bowl, combine breadcrumbs, garlic powder, Italian seasoning, and a little more salt and pepper.

Step 3: Coat the cheese bites
Dip each cheese cube into the flour, making sure it’s fully coated. Next, dip into the beaten eggs, and finally, roll in the breadcrumb mixture to coat thoroughly. For an extra crispy coating, repeat the egg and breadcrumb steps one more time.

Step 4: Freeze before frying
Place the coated cheese bites on a baking sheet lined with parchment paper. Freeze for about 30 minutes to prevent the cheese from oozing out during frying.

Step 5: Heat the oil
In a deep skillet or heavy-bottomed pot, heat about 2 inches of oil to 350°F (175°C). Use a thermometer to maintain the temperature for optimal frying.

Step 6: Fry the cheese bites
Fry the mozzarella bites in small batches for 1–2 minutes, or until golden brown and crispy. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.

Step 7: Serve hot
Serve immediately with marinara or ranch for dipping. Enjoy the cheesy, gooey perfection!
